We were generally in sight of the cliffs, which extend along the coast, and had occasional glimpses of blue mountains beyond, Snowdon towering above them all, with the Isle of Anglesea on our port side, and the county of Caernarvon on the starboard.

Snowdon towering above them all→　Snowdon を主語とする独立分詞構文です。前の語句を受けて「そして〜」という意味になります。

with the Isle of Anglesea on our port side→　付帯状況の with です。with＋名詞＋前置詞句で「〜を―の状態で」と訳せます。

the county of Caernarvon on the starboard→　the の前に with が省略されていますが、上と同じ形です。

私たちの目には、海岸沿いに続く崖がほぼずっと映っていた。その向こうに時折、青い山々が見え、スノードン山がそれらの山々の上にそびえていた。左手にはアングルシー島、右手にはカーナーボンが位置していた。
